- 2 eggs
- 1 onion
- 1kg leeks
-
																																	1
																						Curry
- Some sprigs of parsley. salt. pepper
Preparation tips
1. Peel the onion, chop finely and melt, covered, for 10 min. with the olive oil and a dash of curry powder in a non-stick frying pan.
2. Wash and finely chop the leeks.
3. Chop parsley.
4. In a bowl, mix the rolled oats, a pinch of salt, the chopped parsley and the cooked onion. Add the beaten eggs and about 2 ccs water. Leave to stand for 15 min.
5. Meanwhile, heat 2 tbsp olive oil in a frying pan, add the chopped leeks and simmer for approx. 20 min.
6. Place spoonfuls of the dough in a hot, well-oiled frying pan. Cover to cook one side (2 to 3 min.), then turn over with a spatula and cook the other side (approx. 2 min.). You can make 8 patties.
7. Serve the patties with the leek fondue.
You can add a crushed clove of garlic to the galette dough, replace the water with broth or classic or vegetable milk, add a dozen crushed hazelnuts... A perfectly balanced recipe that should please the whole family!
