Warm bulgur salad with orange and walnuts

Ingredients

  • 200 g Boulgour
  • 2 oranges
  • 6 dattes
  • 230 g chickpeas
  • 100 g lamb's lettuce
  • 1/2 lemon
  • 100g walnuts
  • 1 Four Spices
  • 2 tbsp olive oil
  • x1 tablespoon Xeres vinegar

Preparation tips

1. Boil 20cl of salted water (for 4 people).

2. Place bulgur in a bowl, add allspice, olive oil, salt and pepper. Cover with boiling water and leave to swell for 15-20 min.

3. Peel the oranges with a very sharp knife, cut off the guts and collect the juice in a bowl. Pit the dates and cut into small pieces. Crush the walnuts.

4. Wash and spin-dry the lamb's lettuce.

5. Mix the remaining orange juice, lemon juice, sherry vinegar, salt and pepper in a bowl and emulsify with the olive oil.

6. Fluff the bulgur with a fork, then add the dates, drained chickpeas, walnuts and lamb's lettuce. Drizzle with the orange sauce and add the orange slices. Serve up!
