Ingredients
- 250g coral lentils
- 1 onion
- 500g sweet potato
- 400ml coconut milk
- 150g spinach shoots
- 200g rice
- 1 Homemade sweet curry
- 1 Ginger
- 2cs neutral oil
- salt
- pepper
Preparation tips

Shape and chop the onion. Peel the sweet potatoes and cut them into small dice of 1cm.

quickly rinse the coral lenses

in a large saucepan, heat the oil and sauté the onion 2min. Add the curry powder and ginger, cook for 1min. over medium heat and pour the coconut milk.

add the coral lenses, the diced sweet potatoes and 500ml of water, salt in half baking.

cook covered over low heat for 20 minutes, stirring often and adding a little water if necessary.

put the rice in a saucepan of salt water and cook 10 minutes. From boiling. Drain the rice once cooked and keep it warm.

wash the spinach, remove the large stems and add them in the pan. Add salt and pepper. Check the cooking of the sweet potatoes which must be tender. Extend the cooking for a few minutes if necessary.

serve the curry with rice.
add a net of lemon juice if you find this dish a little sweet.
You can add more curry powder, espelette pepper. And for large appetites, you can add hard eggs like in India. Coral lenses contain fibers, hence their low glycemic intake as well as vegetable proteins. Associating them with rice promotes the assimilation of these proteins.
